Crust
  1. Knead all of the ingredients for the crust using food processor or a stand up mixer with the paddle attachment. Form a ball, wrap with the house holding foil and chill in the fridge for min. 30 minutes.
  2. Prepare the small tart forms (3-4), or one standard size 24cm. Grease with butter/oil.
  3. Roll the chilled dough to 3mm thickness, and transfer to your forms/form. Chill again in the fridge for 30min.
  4. Poke some holes in the bottom of the crust. Bake in 190ÂșC for 20-25min until golden brown.
  5. Cool down to the room temp.
  6. Pour the grapefruit curd and chill for 4h. Decorate with grapefruit pieces and pistachios before serving.
Grapefruit curd
  1. In a medium saucepan set over medium heat, combine the sugar with the cornstarch and add in the juice. Cook, stirring, until thickened and bubbly. Gradually whisk in half of the hot mixture into the egg yolks to temper the eggs. Return the egg mixture to the saucepan and cook, stirring constantly, until the mixture thickens, about 2-3 minutes. Remove from heat and add in the butter pieces. Whisk until melted. Stir in food coloring.
  2. Chill to the room temp before using on the crust.
