Gingerbread cookies are one of my favourite Christmas treats. The smell, that surrounds the kitchen while baking is just amazing! And it's a great pleasure to decorate them.

I 's the high time to start Christmas baking! I really don't like leaving anything to the last moment, and lucky for everyone, christmas treats are recommended to be baked weeks ahead :)

Because of the high content of honey, cookies get hard after baking, but they will soften over time, just for the Christmas, if you bake it now :D

They can be stored in a cookie tin for months. To make them soft faster, place an apple peel in the container and change it after 3-4 days, until your gingerbreads are soft.

Decorate them with roayl icing from my previous recipe for beautiful, firm finish, and no cracks.

Instructions
  1. In a saucepan heat honey and butter until butter melts. Cool to the room temperature.
  2. Place all ingredients in a big bowl and knead or mix the dough. If t feels too soft, chill it in a fridge for 30min. You can also freeze it and use later.
  3. Roll the dough to 3mm thickness, on the flat surface, covered slightly in flour. Cut the cookies, and transfer them into a baking pan covered with the baking sheet.
  4. Bake for 8-10 min in 180ºC.
  5. Cool to the room temp. and decorate with royal icing.
