Whole wheat sunflower bread is a very nutritious and wonderful add on to your breakfast. The hint of cinnamon makes it taste even better!

I am not a very big fan of baking bread, but recently I found this activity very relaxing. There is something soothing and very satisfying, while watching it grow, and the smell during baking filling the whole apartment reminds me somehow about my childhood.

We also got a little tired of the traditional danish bread, rugbrød, which for me just overwhelms the taste of any sandwich! Instead of tasting the toppings, you have in mouth mostly the taste of the bread itself, which is just too powerful.

This sunflower loaf makes a perfect bread for any sandwich! A dash of cinnamon gives it a very interesting and original taste. Additionally, it's so good that you can just eat it with a smear of butter on top :) It's soft and just melts in your mouth!

Instructions
  1. Heat milk in the microwave, or over low heat until it's warm. Pour into the stand mixer bowl and stir in oats, yeast and honey. Let the mixture sit for 10 min until yeast begins to foam.
  2. Add the rest of the ingredients (except the egg) and use the dough hook to knead the dough. Form dough into a ball and place in a large, oil greased bowl. Cover the bowl with a towel and allow the dough rise for around 1h, until doubled in size.
  3. Grease the loaf pan. After the dough has risen, knead it juast a few more times, then shape it into a loaf and place in prepared pan. Cover the loaf with the towel and allow it to rise again for another hour.
  4. Once the dough has risen, preheat the over to 190 degrees C. Beast egg in small bowl and brush over the top of the dough. Sprinkle with oats and sunflower seeds.
  5. Bake for 35-40 min, until golden brown. The loaf is ready when sounds hollow when tapped on the bottom. Cool down for at least 2h.
