Baked eggs can be a great alternative to your regular scrambled eggs for breakfast. They taste great and can be prepared with your favorite ingredients.

T he holiday is over and I'm back in Denmark. After almost a month of pure relax, it's time to comeback to the reality. During my time in Poland I had a chance to get a lot of amazing food to help me continue with my diet. Our cupboards are stacked with groats, seeds, whole wheat pasta, pickles, as well as fresh tomatoes, cucumber and eggs.

Today I decided to make a delicious twist on egg dish, as I got a bit tired of scrambled eggs ;) The other reason was, that I really wanted to try my new heat-proof dish from the polish pottery manufacture- Boleslawiec. I hope you will enjoy the final effect.

Instructions
  1. Crack 2 eggs and beat them in a small bowl.
  2. Chop pepper and onion and add to eggs.
  3. Cut the cheese and add to the mixture.
  4. Spice the eggs with salt, pepper and your favorite herbs.
  5. Pour the mixture into the heat-proof dish.
  6. Crack the remaining eggs on top of the mixture. Slice the tomato and spread around the egg. Sprinkle with some black pepper.
  7. Bake in 180° for 20 min.
