Fluffy pancakes with Greek yogurt are not only delicious, but they also contain a lot of proteins. Absolute breakfast treat!
ancakes are definitely associated with breakfast. Today I'm sharing my favorite recipe with Greek yogurt, which adds a nice fluffy texture to this amazing dish. Pancakes are also with whole wheat, to provide some fiber to your breakfast, which will keep you full for longer. I like to top them with some berries, honey and sprinkle of coconut. Feel free to experiment, to find your best combination!
Combine all dry ingredients (flours, baking powder, salt and xylitol) in one bowl.
Whisk egg, milk, oil and vanilla extract in separate bowl.
Pour the egg mixture over the dry ingredients and whisk together.
Add Greek yogurt and stir until combined.
Heat a small, non-stick pan. Working in batches spoon around a quarter cup of batter for each pancake, and cook until the bubbles appear. Flip the pancake and cook for another minute. Both sides should be golden brown.
Serve warm with your favorite fruits and honey.
