Light and healthy salad with simple dressing and croutons.

S alads don't have to be boring and associated only with diet food! I always enjoy playing with tastes and mixing different ingredients.

Today I present you this simple and delicious edamame salad, which is perfect as a light breakfast, snack or a side dish to your dinner. Add some seeds, nuts or dried berries and serve it with homemade vinaigrette dressing, and add some crunchy croutons on the top!

Homemade croutons give the salad some extra crunch.

Salad is a perfect breakfast and tastes great with a cup of morning coffee.

Edamame salad
Instructions
  1. Combine ice berg and edamame (cook according the instructions, if you use frozen edamame).
  2. Cut cucumber, onion and tomato and add to the salad.
  3. Add basil and seeds if you desire.
  4. Spread a tiny layer of olive oil on the toast slice and cut it into cubes. Heat a small pan and roast the toast cubes until they turn light gold.
  5. Add the croutons right before serving.
Vinaigrette dressing
  1. Combine all of the dressing ingredients and mix with the salad
